The people have spoken! In a recent poll I put up on our Instagram story, I asked if you’d prefer to see a recipe for a cherry coke float or a sparkling strawberry lemonade.

You guessed it! The lemonade recipe won by a landslide!

So here I am, gladly bringing it to you one of the most refreshing summer drinks I’ve had in a while!

This recipe is an easy, yet yummy refreshment to serve at your next gathering! (eh hem.. Fourth of July)

Here is what you’ll need:

Ingredients:

  • Roughly 1 1/2 cups chopped strawberries
  • 2 Tbsp. sugar
  • 2 Tbsp. water
  • 1 cup boiling water
  • 1/2 cup sugar
  • 1 cup freshly squeezed lemon juice
  • 4 cups cold sparkling water or club soda
  • Pop Rocks! (optional)

Step 1:

Put strawberries, sugar (2 Tbsp.), and water (2 Tbsp.) into a blender and puree. Remove mixture and strain to remove pulp and seeds.

Step 2:

In a separate saucepan stir together the boiling water and sugar (1/2 cup) until the sugar has fully dissolved. Stir in lemon juice and strawberries and let cool.

Step 3:

Pour in the sparkling water or club soda and serve over ice.

Tip:

To rim your glasses with Pop Rocks, first, take your finger and spread a thin layer of honey over the rim of each glass. Pour the Pop Rocks onto a plate, dip the glasses in them, and voila! To add a super Pinteresty vibe to your refreshing lemonade, garnish your glasses with a thin slice of lemon!
